Cuban Beans and Rice
Ingredients:
- 1/2 onion
- 1 stalk celery
- 1 tsp. chili powder
- 1 tsp. cumin

- 1 tsp. paprika
- pinch of salt
- 2 cans black beans
- salsa
- chopped onions
- red bell pepper
- rice or tortillas
Instructions:
- Saute onion and celery
- Add spices; stir and fry lightly
- Add black beans and a little water or tomato sauce.
- Cover; simmer until mixture is heated thoroughly. Stir.
- Add a bit of salsa; heat.
- Serve on rice or a tortilla
- Sprinkle with chopped onions and red bell pepper.
